1.
"Penis erectus non compos mentis" has no verb in it. The verb 'to know' is "cognoscere". "Compos" implies also the accusative plural case, whereas "mentis", the agreeing noun, is genitive singular. Also, the famous Latin term "compus mente" means to be in full mental health (literally, "full by thought"), not conscience. A possible word for conscience (since we derive our word from the Latin) is 'conscius', though this can also be used within a relative clause to mean 'in the know' (conscious).
So then, taking into account that the Latin word for "penis" is in fact "penis" (which I doubt muchly), the Latin translation should read something along the lines of...
Penis erectus nullum conscium cognosceret.

This is a quote that, if said in ancient Rome, wouldn't get you very far. This sentence is from a very much bastardised version of the language. The literal meaning "Don't let the bastards bring you down" is so very far from the Latin that it's almost a non-translation.
Literally, the phrase "Don't let the bastards bring you down" is impossible to translate into Latin; as they had no verb for "bring down" in that sense. "Subferre" is the literal translation of the verb, but that means more along the words of 'carry down'.
3.
Puzzling... I don't know of the word "irresus", I'll look it up later to see how lame I am. I'm assuming, from the context of the sentence, it means "joke", but the Latin for joke is "iocus". "Ridebis" literally means "you will laugh", and there is no clause with "si" (if).
For this translation, I shall substitute the verb "fuck" for the verb "verberare", to hit or strike. This is for two reasons: (a) it's the closest possible translation, and (b) I have no idea where to start as far as the verb to fuck means.
Si ioces non intellegent, illos verberate.
Sorry to be so anal... where did you guys get these phrases from anyway? I'd be interested to know.

Well, it's obviously medieval Latin, and non-secular. From a religious text, either part of a sacred ritual, or a translation from the bible.
Due to its medieval style, it should be translated into a medieval English style to retain some sort of context.
Literally translated...
"Not (un)to us, Lord, Lord! but (un)to thy name give glory!"
I don't know the exact origin, but hey. I'm saying one of the two things mentioned above. Am I anywhere near?
